This is a recipe that I've developed through some research because I wanted to have fluffy pancakes to curb my prenatal cavings with my first child. It is a very easy recipe.
1 1/4 C Flour
2 T Sugar
2 t Baking Powder
1 1/3 C Milk
3 T Oil (sub applesauce)
1 Egg
Mix dry ingredients and then wet ingredients. Mix all together. Make 4in. pancakes on med-heat. Serve with butter and syrup or toppings. Serves 4.

ReplyDeleteI always add a bit of flaxseed in my pancakes. It's really healthy and adds a nutty flavor. I usually substitute it for a 3rd of the flour (in the above recipe, it would be 1/4 c. of flaxseed and 1 cup flour) You should try it sometime! :-)

ReplyDeleteI have enjoyed implementing flaxseed as well into pancake recipes, including this one. I combined your recipe with another one & had blueberry pancakes this morning. I'm excited to try out your enchilada casserole when we have leftover taco meat. This should come in handy soon.
